This week the challenge I put for myself is to go vegetarian or vegan for a healthier and fitter me. I've done this for a month back in Fall and it's surprisingly easy to do when you know what to eat and I've lost seven pounds in one month by cutting out meat and my digestion has been on point.

I want to lose another seven to ten pounds so here I am doing this again. YouTube health and vegan gurus (is that what you call them?) have been really helpful this time. I love food. And surprisingly, I've come to love no-meat dishes. Lisa Lorles is a favorite vegan that I love to watch on YouTube. She actually has delicious, filling,  and easy vegan recipes and since she's studying to become a nutritionist, she also gives out nutritional benefits of the ingredients in her recipes.

I've tried out so many of her recipes and they're all good! Here's one that she shared that I am loving - Coconut Yogurt Bowl. But just a heads up, it can be a little bit tangy because of the strawberries. Make sure the strawberries are in season so you can be sure to get sweet ones if you're more of a sweet tooth.

Coconut yogurt supplies us with several key vitamins and minerals. Granola is a great digestive aid by giving us a boost of both insoluble and soluble fiber.
